A farewell dinner WITH pics!

Doing a quick dinner posting. Last night we had a farewell meal with my niece and her family. Their heading back up to Oklahoma later this month.

Remember, there are nine people in this house. NINE!

So, any event is a huge undertaking in getting everything ready. Between tidying bathrooms, sweeping, carpets etc, the cooking must be something I know I can control the time of. Last night I made the below for the 1st time and it was SUPER easy! Because it was a little here and a little there, I was able to clean in-between the prep work and NOT run around like crazy. Okay, so maybe there was a tad of crazy but I was also finishing up the baby blanket and matching hat.

The meal;

Cheesy Potato & Ham Bake w/ Side Salad, Homemade Bread and Lemon Tarts for dessert.

Rant, Recipe & Special Invite

For all of you who work from home, dontcha hate all the “Oh, you don’t work?” I feel your pain!

Let me tell you. While I may NOT have a job outside the home. A job which actually pays me FAIR wages… I work.

In an underpaid, underappreciated position that has no start time, nor stop time.

7:15 wake up get coffee, turn brain on.

7:30 wake up wee man for school.

7:45 breakfast for wee man.

8:10 off to school for wee man.

8:40- prep for dinner. (ie; pull whatever from freezer and make sure I have all needed items)

MORE COFFEE

9:00 clean kitchen (unload dishwasher-reload if needed, wipe  counters, etc.

9:30 start laundry (typically I do 2-3 loads a day)

10: 00  backwash pool/check filters

MORE COFFEE

10:30 open up word get as much writing done as possible.

12:00 swap loads of laundry over and hand/fold dry load

1:00 check bathrooms and clean if necessary

1:30 swap laundry again (fold/hang new load)

MORE COFFEE

2:00 back to writing.

3:00 get wee man

3:30 prep for dinner. (get meat in oven or potatoes skinned, etc.

4:00 start dinner.

5:00/5:30 dinner time.

6:00/6:30 begin after dinner clean-up and swap last laundry load

7:30 pack lunches

8:00 back to writing.

Now, in the midst of the above there is reviewing the bills, giving out the kids chores (making sure they get done) any sewing or hemming or like now, making a baby blanket, is done in-between.

Have I mentioned I repaired our oven a few weeks ago? As in replaced both elements? Yep, did. Also, I redid all out trim, sanding, staining and sealing.

So while I may not have the “PAID” job… I work.

I’m not complaining per say, because my day IS filled with things I love.

Wee Man and Wee Miss, writing and cooking.  Speaking of…

RECIPE!

Cheesesteak Bake

(3-5) Pounds ground beef

Either a bag of frozen onions and peppers or chopped fresh.

A pkg of sliced Provolone (24 slices)

Mushrooms. (Can be canned or sliced fresh)

4 Cans of Biscuits

Worcestershire Sauce (am I the only one who can NEVER spell that word without the help from spell check?)

 

Brown ground beef (use potato masher to keep meat nice and crumbly as it cooks) with onions, peppers and mushrooms, if fresh. (if canned add when done) Add a few shakes of Worcestershire as you cook. When done, drain well.

Add more Worcestershire to the cooked meat (a few shakes should work fine) and mushrooms,  mix well.

In large casserole pan, spray bottom with non-stick spray. Using hands, flatten biscuits to create a solid biscuit bottom. It took me one can plus 2 extra from the 2nd can.  Add 1/2 the meat mixture evenly over top. Top with provolone. Next, using remaining biscuit break into small pieces and evenly scatter on top.

Repeat all in 2nd casserole pan.

Bake about 15-25 minutes until you see biscuits browned and everything is nice and bubble.

Serve with a nice salad and BOOM, a fun, tasty, easy and affordable dinner!

Horror Chat & Recipe (What a combo right?)

Quick post as I’m still going full steam with no pause in sight.

Book Update: Two Summer Steamy reads coming soon…I’m waiting on some feedback to a much sweeter, slower paced story and Swamp Magic Bk4 is also still in the works. I’ll keep everyone updated.

For those new to me, I’m going to share a few reviews from a fun, horror cross over I did a few back.

“Wicked Good

What isn’t great is the speed with which the book ended. Thus 4 out of 5 stars.
This was a well written and well edited story with great characters and a wicked plot.

Ghastly Fun

This is the third Bobbi Romans book I’ve read and I really love her writing still. Fast paced horror and love. Not one dull moment for her characters or for her readers.
This book is definitely not for the squeamish or faint of heart. But for guilty pleasure reading, just the ticket.”

 

 

To clarify… this story is NOT a romance but believe it or not, does have romantic elements. It is horror.  Another reviewer mentioned  “Grindhouse flick”  so for any tempted to read, understand all this BEFORE purchasing. But I think its fun.  So while I write, as another review said,

Recipe Time!!

I meant to pop on sooner to share this. At Easter, I did this and it was hoovered in seconds.
Bacon Wrapped Asparagus

 1-2 Bunches Asparagus

1-2 pkgs Bacon

1/2 Cup of Brown Sugar

1 Stick of Real Butter

1-2 Tsp Garlic Powder

Garlic salt with chives

Now to conserve on money I cut my package of bacon in half. Bacon stretches so it worked fine.

PREHEAT OVEN to 400

Hold bacon up by top of Asparagus and simply wrap it around. Doesn’t have to be a solid wrap but just wind it around. Repeat this for all asparagus and bacon. Laying each piece down on parchment lined cookie sheet.

Once done, melt stick of butter, add brown sugar and garlic powder and mix well.

Using a basting brush, brush butter mixture over asparagus.

Lightly sprinkle garlic salt with chives over tops.

Bake for about 10-15  min watching close for signs bacon is cooked.

Womb-Eight Tales of Maternal Mayhem (review) & Recipe Double Feature!

Womb: Eight Tales of Maternal Mayhem by [Hart, Megan]

Today is a double feature but one that pairs well together.

A Recipe and a Review.

Let’s do the recipe 1st as it will pair with the Review in a most, dark and decadent way.

Dark Chocolate Popcorn!

*Remember the Cracker Candy? Use the same stuff!*

I popped (being lazy and using microwave popcorn-but I think traditional would be best though the microwave corn DID work) 2 bags of Homestyle Popcorn.

(1) Stick of Real Butter

(1 1/2) Cups firmly packed Brown Sugar

1/2 Cup Chopped Walnuts

1/2 bag of Dark Chocolate Semi-Sweet Chips

Pop the corn and put in large mixing bowl. To make it easier, you may wish to divide the popcorn into TWO bowls for easier mixing later.

Melt butter and add the brown sugar, cooking for 3-5 minutes until bubbly and thick.

Pour over popcorn and using large spoon immediately stir. Add nuts and stir once more then when a tad cooler, add semi sweet chips.

Once mixed well, turn out onto a parchment lined cookie sheet (or two) and set in fridge to reset. Later break up and place into bowls.

Store covered in fridge to keep the crunch.

Sweet Treat for Cheap Peeps! Cracker Candy!

CRACKER CANDY!!!

If you like Toffee Bars, such as Heath, Skor etc, you will LOVE Cracker Candy! I made my 1st batch tonight!

Not my recipe, but rather one I’d heard about and googled the recipe for.

Easy, cheap and OH SO GOOD!

Ingredients:

(1) Sleeve Saltine Crackers

(1/2) Bag of Chocolate Chips

(1/2) Cup of Chopped Nuts *Optional*

1 Stick of REAL Butter

1 Cup of Firmly Packed Brown Sugar

Line cookie sheet with tin foil. Lightly grease. Line sheet with crackers. In medium pot melt one stick of REAL butter and add one cup FIRMLY packed brown sugar and cook over medium heat 3-5 minutes until it comes to a nice thick bubbly like sauce.

Preheat oven to 400

Pour butter/brown sugar mixture over crackers and using a spatula, gently spread evenly. Put in oven for 5 minutes. Remove and let stand 5 minutes. Sprinkle some chocolate chips over the top and let stand another 5 minutes.

Once melted using spatula, gently spread the chips to even coating over crackers.

(Drop an F-Bomb here or there as you do this as the chocolate sticks to the spatula. Or be wise and butter the spatula lightly for the spreading.)

Top with chopped nuts if desired and place in fridge for chocolate to refirm.

Once firmed, use the edges of the tin foil to lift up the crackers and break into pieces. Keep in airtight container in refrigerator.

If you have sweet eaters, hide candy in prune container or Raisin Bran box because this gets GOBBLED UP!!!

RECIPE ALERT!

So, any good cook will admit to erring in “winging” some new creation. I had mine. It was HORRID. I tried to do a surprise “fancy” breakfast… yeah, no. For dinner, I revereted to a tried and true favorite.

Broccoli, Rice and Cheese Casserole, but DINNER style.

What’s dinner style? I add meat. I’ve also converted from my mothers, Cheese Whiz ingredient. Normal size family? Stick with the Cheese Whiz, massive crew like mine who has to make TWO pots, use Velvetta.

Basic breakdown, I brown hamburger meat with diced onions and drain. Return to pot add a family size bag of frozen chopped broccoli and a stick of butter. Over medium heat while stirring often, cook until broccoli is tender. Add one family sized can of cream of mushroom or chicken stir well, add instant rice (I actually use par-broiled but have to add more water and watch really carefully) water and cubed Velvetta and a dash or two of salt or garlic salt.

No, I didn’t give quantities because with this one, just wing it depending on your family size. I can give a typical amount, such as 3-5 pounds of ground beef, depending on how meaty you like it, rice 2 cups, water accordingly, extra butter if making a super large batch, etc.

Never heard of this thing much less seen or eaten, and BAM! My aunt shows me a menu from a new restaurant she was raving about and LO and BEHOLD, there it is. Tamarind and date dipping sauce to the Samosas Dish!

A Thanksgiving Romance with Laughs & Warmth!
